Most of these recipes are either grilled chicken or one-pot meals using a variety of vegetables. I use a variety of spices to add flavor to the chicken. You’ll notice however that ground ginger is used in all these recipes. It is my absolute favorite spice, I use it with chicken, meat or even fish as it adds great flavor to every dish.
When it comes to cooking weeknight meals, time is of essence. And I have taken that in consideration when picking these recipes for you. You will notice that most recipes are ready in less than an hour, except for one. But sometimes, to cook a delicious meal, it is ok to spend a little time and effort in the kitchen.

Moroccan chicken with potatoes and broccoli is the ultimate one pot meal. You have your protein from the chicken, vitamin C from the broccoli and starch from the potatoes. The preserved lemons give the potatoes a unique flavor.

This chicken bistro does take more time than any of the recipes on this post. It also uses more ingredients, but it will be worth it. I’d like to say that despite the effort, it is still an easy and healthy comfort food for those cold winter night.

Another Moroccan chicken dish. This Moroccan chicken with carrots and broccoli is very similar to the first recipe, Moroccan chicken with potatoes and broccoli, except that I use carrots in stead of potatoes. This makes the dish much healthier.

Ahh… a very delicious grilled chicken. When I first made this chicken, my son Amir thought it was the best grilled chicken I have even made. To make it a meal, I like to grill some vegetables on the side.

This is a very elegant and extremely flavorful chicken dish. Chicken and mushrooms always go well together. But when I added the saffron, it brought the dish to a whole new level. It is my favorite on this list and that is why it was picked as the cover picture 😉
