Almond Quinoa Parfait
This almond quinoa parfait is a great and healthy way to start your day. It’s a quick and easy breakfast that is gluten free and high in protein. It will keep you full and focused for a good 3 to 4 hours.

Ever since I found out about all the quinoa health benefits, I started adding it to almost everything. So why not use it in a parfait instead of granola.

I like to use plain yogurt and flavor it myself with almond or vanilla extract and add a little bit of honey to sweeten it. Sometimes, I use just plain yogurt by itself. I think it tastes just as good. Flavored yogurts such as vanilla yogurt or any fruit yogurt contain a lot of sugar. That’s why I prefer to go with the plain yogurt.

Most of the packaged foods you and I buy from the store, have a good portion of sugar in them. So I try my best to cut down the amount of my family’s sugar intake by prepping most of the food myself. In fact, I am hopping that one day, I’d be able to eliminate the sugar intake for good. That would be very challenging, but with little steps, I think I will get there, and I hope you can too 🙂

Prep time: 5 minutes

Serves: 1

Ingredients:

1/2 cup of mixed berries (I like strawberries and blueberries)
1/2 cup of low fat plain yogurt*
1 drop of almond or vanilla extract*
1/2 – 1 teaspoon of honey*
1/4 cup of cooked quinoa (white or red)
1 tablespoon of toasted chopped almonds
1 teaspoon of toasted sesame seeds (optional)

*Instead of plain yogurt, almond or vanilla extract, and honey, you can use low fat vanilla yogurt.

Directions:

In a small bowl, mix together the plain yogurt, almond or vanilla extract and honey. If you are using vanilla yogurt, you can skip this step. Almond Quinoa Parfait 2
Start building the parfait by putting half the quinoa at the bottom of a cup or mason jar. Top off with half the almond flavored yogurt, then half the berries. Almond Quinoa Parfait 3

Top off with the toasted almonds and sesame seeds. Almond Quinoa Parfait 5
