  Apple Cinnamon Cake

The fall and winter seasons are the perfect time to bake apple cinnamon cake. It is such a delicious treat that could be served as a snack or desert. You can also give this cake as a comforting gift to your friends and family. In fact you can give this apple cinnamon cake as a Christmas gift, bring it for a Thanksgiving party or an office pot luck. And don’t be surprised if people asked you where you bought it from, it is that good 🙂

I got the original recipe from Just a Pinch but I did change it a bit of course, I can’t help it :P.  I am using 2 apples instead of 1, I used a little less sugar, and added a pinch of salt, which I think is very important when it comes to baking. I also added walnuts, which add a bit of a crunch.

You can use the same recipe in a loaf pan, then you will have apple cinnamon loaf.

Prep Time: 20 minutes

Cook Time: 40-50 minutes

Serves: 8-10

Ingredients:

1/3 cup Brown sugar, not packed
1 tsp Cinnamon
1/2  cup White sugar
1/2 cup Melted butter
3 eggs
1  tsp Vanilla extract
1 1/2 cup All-purpose flour
1 tsp Baking powder
1 tsp Baking soda
1/2 cup Milk
2 Apples, peeled and chopped
A pinch of salt
1/4 cup of Walnuts (Optional)

Directions:

Grease 9 inch cake pan using cooking spray

Preheat oven to 350

Grease a 9 inch cake panusing cooking spray

Mix the brown sugar and cinnamon

Mix brown sugar and cinnamon together and set aside

Mix the dry ingredients

In a bowl, combine dry ingredient together: flour, sugar, baking powder, baking soda and salt and set aside

Mix the wet ingredients together

In a separate bowl mix the eggs, melted butter, milk and vanilla extract until incorporated

Add dry ingredients to wet ingredients

Stir dry ingredients into the egg mixture a little bit at a time

The cake batter

Mix well until the wet and dry ingredient form a smooth batter

Pour half the batter into the prepared pan

Pour half the batter into the prepared pan, and top it off with half the apple and half the brown sugar cinnamon mixture

Pour remaining batter over apple layer

Pour remaining batter over apple layer; top with remaining apple, add brown, sugar cinnamon mixture and walnuts if using

Bake 40-50 minutes, until a toothpick inserted in center of the loaf comes out clean

Allow the cake to cool before serving. Enjoy it warm or at room temperature!
