Baby Arugula and Avocado Quesedilla

 I needed a quick lunch the other day, so I came up with this simple  quesedilla recipe. I hope you get to try it and enjoy it as much as I did.

Prep Time: 2 minutes 

Cook Time: 8-10 minutes

Serves: 1-2

 

 

 

 

 

 

 

Ingredients

1

 2 Flour Tortilla

1 Cup grated cheese, sharp Cheddar or Mexican blend

1 Cup of Arugula

1/2 Cup of Avocado Slices

1 Tbsp of Parsley

Directions:

 Heat up your skillet to medium heat

 Lay your first tortilla on the heated skillet

 Sprinkle 1/2 cup of cheese

 Add the Arugula, Avocado Slices, and Parsley

 Top off with the remaining 1/2 of cheese

 Add the second tortilla

 Cook for 3-5 minutes, then using a spatula flip the tortilla to the other side

Cook for another 4-5 minutes

 Cut up in 4 equal parts

 Serve hot or at room temperature
