Beef Stew

I was cleaning the fridge the other day and stumbled up on a bunch of vegetables.  So I decided to make a beef stew. I was planing on making Ghaymen, a Persian beef stew that day (you can check out the recipe here), but a beef stew with vegetables sounded better. And I was glad I did. The stew left an incredible aroma in the house for a couple of days. It is amazing how the combination of meat, vegetables and herbs create such a delicious meal without using any fats (except for olive oil), which makes it the perfect guilt free comfort food.

Prep time: 10 minutes

Cook time: 2 hours and 15 minutes

 Ingredients:

1 lb of meat stew cut in 1 inch cubs
1/2 onion diced
1/2 onion sliced
2 Celery sticks cut in 3rds
2 cups of white button mushrooms, stems removed
2 carrots sliced about 3 inches wide
2 Potatoes peeled and cut in large wedges
2 zucchinis cut in large wedges
2 tomatoes cut in large wedges
1 Tbsp of tomato paste
2 garlic cloves minced
1 tbsp of ground ginger
1 tbsp of Italian herbs
1 cube of Knorr (Chicken Flavor)
2 Tbsp of Olive Oil
1 cups of water
Salt and Pepper to taste

Directions

Preheat the oven to 250 degrees
Using the stove, heat up a Dutch oven over medium heat and add the olive oil, chopped onions, meat, garlic, ginger, salt and pepper
Sauté the meat  until brown and the onions are softened

Add the tomatoes and tomato paste

Saute again until the tomatoes are softened

Layer the vegetables on top of the meat as follow: Sliced Onions, Celery, Potatoes, Carrots, Zucchini, and then Mushrooms.  Then add the Italian herbs and crumble the Knorr cube
Top everything with water

Cover with the lid, turn off the stove, and transfer to the heated oven to bake for 2 hours
Enjoy the aroma in your house

Serve hot with bread rolls.
