Beef Tagine With Green Beans

Beef tagine with green beans
Beef tagine with green beans is another one pot Moroccan dish that I would like to share with my readers.

The preparation of this dish is very similar to the previous tagines I have posted before. You just cook the meat then add the desired vegetables. The only thing you have to adjust are the spices. In Moroccan cooking we believe that certain spices compliment certain vegetables the best. But you don’t have to worry about that. Just follow the recipe and you will get it just right.

As I mentioned before in other posts, we use the pressure cooker in Morocco to cook the meat which cuts down the amount of cooking time. But I don’t like to use the pressure cooker even though I own one mainly because I don’t feel safe using it. That’s why you’ll always see me using the dutch oven on my recipes. Whatever pot you pick, I assure you, you will get a delicious tagine as long as use the right ingredients.

Serves: 4

Prep time: 15 minutes

Cook time: 2 hours

Ingredient:

2 lbs of beef
1 lb of green beans
1 chopped onion
1 teaspoon of olive oil
1 tomato peeled and diced
4 minced garlic
Salt and pepper to taste
1 teaspoon of ground ginger
1 teaspoon of turmeric
Juice of half a lemon
1 tablespoon of cilantro
4 cups of water

Directions:

In a large pot or dutch oven, add the olive oil, chopped onion, garlic and meat. Season with salt, pepper and spices.

Saute for 10 to 15 minutes on low heat until the meat is browned and the onion is softened. Then add the the diced tomato.

This might seem like a lot of onion, but as the beef cooks, it will reduce in volume and turns into a thick sauce.

Saute the meat with tomato for another 5 minutes, then add the water and cook on low medium heat for 90 minutes or until the meat is fork tender.

Once the meat is cooked, add the green beans, cilantro and lemon juice.

Cook for another 10 to 15 minutes until the green beans are tender.

Enjoy the beef tagine with green beans hot with some Moroccan bread or steamed rice.

  5. Cook for another 10 to 15 minutes until the green beans until the green beans are tender.
  6. Enjoy the beef tagine with green beans hot with some Moroccan bread or steamed rice.
