Blueberry Muffins

0 These are muffins you will not feel bad giving to your children for breakfast . In this recipe, I substituted the butter with coconut oil and the sugar with honey. I also substituted half the flour with ground walnuts.

Prep Time: 5 minutes

Cook Time: 25 minutes

Yields: 6 Medium size muffins

Ingredients:

1/2 cup of flour
1/2 cup of ground walnuts
1 tsp of baking powder
A pinch of salt
1 Egg
1/4 cup of low fat plain yogurt
1/4 cup of coconut oil
1/4 cup of honey
1 tsp of vanilla extract
1/3 cup of Blueberries (Fresh or Frozen)

Directions:

2 Preheat the oven to 350 degrees, and line your muffin pan with muffin cup 3 Combine the dry ingredients: flour, walnuts, salt, and baking powder 4 Lightly beat the egg 5 Mix in the yogurt, vanilla, honey, and coconut oil 6 Add the dry ingredients and mix well 7 Gently fold in the blueberries 8 Using an ice cream scoop, spoon the batter into the muffin cups 9 Bake for 20 to 25 minutes until golden brown 10 Let the muffins cool for an hour before serving
Enjoy for breakfast or even as an afternoon snack!
