Chicken with Mushroom and Broccoli

0 This chicken with broccoli and mushroom is the perfect dinner recipe for those crazy busy week days. It is easy, healthy, and delicious. It might take a little bit of extra effort from your end, but is worth the 45 minutes and you will know you had a healthy dinner. This recipe will tastes better the next day, so go ahead make extra so you won’t have to cook 2 days in a row.

Prep Time: 5 Minutes

 Cook Time: 40 Minutes

 Serves: 4

 Ingredients:

1 1 lb of Chicken Tenders or Thinly Cut Chicken Breast
1 Cup of Chopped Onion
2 Cups of Sliced White Mushrooms
2 Cups of Broccoli Florets
2 Tbsp of Olive Oil
1 tsp of Ground Ginger
1 tsp of Garlic Powder/ or 2 Cloves of Minced Garlic
1 tsp of Italian Herbs
Salt and Pepper to taste
1/4 cup of water

Directions:

3 Heat up a large skillet and add 1 tbsp of olive oil and the mushrooms. 4 Saute the mushrooms for 5-7 minutes until softened then remove from skillet and set aside 5 Add the remaining tbsp of olive oil and the chopped onions, saute until slightly brown as shown on the picture above 6 Add the  chicken, salt, pepper, ginger powder, Italian herbs, and garlic powder or garlic. 7 Saute for 5 minutes then turn the chicken over. 8 Add the broccoli florets and 1/4 cup of water. 9 Cover with a lid and cook for 25 minutes or until the chicken is fork tender. 10 Uncover the skillet and turn the chicken to the other side one more time. 11 Add the cooked mushrooms. 12 Cover the skillet one more time and simmer for about 3-5 minutes just until the mushrooms heat through. 0 Enjoy hot with bread rolls or cooked rice.
