This Chocolate Peanut Butter Banana Pudding is a great a way to end a workout session, eat for breakfast, as a mid-morning snack, or even a late night snack. This treat is full of nutrients, low in fat, carbohydrates, and calories. More importantly, it is delicious and will fill you up and keep your energy up for hours.
Let me share with you how I came up with this recipe. When I was pregnant with my last baby, I would get really hungry an hour or two after dinner (I don’t miss those days, if you know what I mean) but I didn’t want to eat foods that are high in fats and sugars. So at first peanut butter, yogurt and honey sounded pretty good. Before long I started adding coco powder, which is (and I am sure most will agree) the best compliment to peanut butter. Then one night, I thought hmm… this mixture could use a banana and boy was it good. After having the baby, I started to have the same chocolate peanut butter banana pudding for lunch a couple of times a week to lower my calorie intake yet keep full and energetic to keep up with an infant and a 7 year old. Along with other methods (which I will share with you later), I was actually able to go back to pre-pregnancy weight before my son’s first birthday.
I use a ripe banana because it’s usually sweeter in order to avoid adding sugar or honey. You will notice that I added honey in the ingredients as an option, but I didn’t use it in this recipe.
I hope you get to try the recipe and enjoy it!
