Cinnamon Swirl Banana Bread

cinnamon swirl banana bread I love banana bread, and I love cinnamon. That’s how cinnamon swirl banana bread was born in my kitchen. I have a few banana bread recipes on Tajoon, so far this is my favorite.  Something about the cinnamon swirl, it can make any cake or bread taste amazing.

I always use about the same ingredients I used in my moist banana bread recipe because it comes out very moist without loosing that authentic banana bread density. I hope you’ll give this one a try. It is worth every effort.

Prep time: 15 minutes

Cook time: 1 hour

Makes: 1 9*5 loaf

Ingredients:

Batter:
3 very ripe bananas
3 large eggs at room temperature
1/4 cup of low fat plain yogurt
1/4 cup of cooking oil or melted butter
1/4 cup of sugar
1 teaspoon of vanilla extract
1 cup of flour
A dash of salt
1 1/2 teaspoon of baking powder
1 teaspoon of baking soda
1 cup of ground almonds or walnuts

Swirl:
1/2 cup of brown sugar
1 tablespoon of cinnamon

Directions:

Preheat the oven to 350 F degrees. Grease a 9*5 loaf pan using cooking spray or butter and flour.
I like to use cooking spray. It’s easy to use and it works every time.

cinnamon swirl banana bread 1 In a small bowl, make the swirl by mixing together the brown sugar and cinnamon. Set aside.
Prepare the dry ingredients by sifting together the flour, salt, baking powder and baking soda. Set aside. cinnamon swirl banana bread 2 In a large mixing bowl, mash the bananas using a fork, and add the eggs. Mix lightly. cinnamon swirl banana bread 3 Add the yogurt, oil or butter (whichever you are using), sugar and vanilla extract and mix well. cinnamon swirl banana bread 4 Add the prepared dry ingredients and mix until incorporated. cinnamon swirl banana bread 5 Fold the ground almonds or walnuts into the batter.
You will notice that the ground almonds I am using are very fine. I do that to hide them in the batter so the kids will eat the banana bread. But if you like crunchy stuff, you are can use chopped nuts. cinnamon swirl banana bread 6 Pour half the batter into the prepared loaf pan. cinnamon swirl banana bread 7 Sprinkle half of the cinnamon sugar mixture over the batter. cinnamon swirl banana bread 8 Add the other half of the batter. cinnamon swirl banana bread 9 Then top off with the remaining cinnamon sugar mixture. cinnamon swirl banana bread 10 Bake for 50 minutes to 1 hour or until the toothpick comes out clean when inserted into the center.
I usually start the toothpick test after 45 minutes. I do it every 2 or 3 minute until it comes out clean to ensure that the bread doesn’t dry up. cinnamon swirl banana bread 11 Remove from the oven and set on a cooling rack for at least 30 minutes before un-molding.
Awww…. by now your house should smell amazing. Seriously, if you want that fresh cinnamon smell in your house, just baking this bread.
