Date and Walnut Energy Bars

I love to make these date and walnut energy bars and store them in the fridge for a quick and healthy snack. They are really easy to make, cost a lot less than the energy bars you buy at the store, and more importantly they don’t have any preservatives or added sweeteners.

We use orange blossom water in a lot of recipes in Morocco, so I thought why not add it to my energy bars. And I am glad I did, it gave them such a nice fresh taste.

Prep Time: 10 Minutes

Inactive Time: 30 Minutes

Ingredients:

2 Cup Pitted Majdool Dates
1 Cup of Walnuts
1 + 1/2 Cup of Granola (Honey Flavor)
1/4 Teaspoon of Cinnamon
1/4 Teaspoon of Orange Blossom Water (Optional)

Directions:

Line an 8 x 8 baking dish with plastic wrap and set aside.

To the food processor, add the dates and walnuts.

Process until they start to form a ball as shown on the picture.

Add the 1 cup of granola,  the cinnamon and the orange blossom water .

Pulse just a couple of times until all the added  ingredients are combined with the dates and walnuts.

Remove the date and walnut paste from the food processor and place into the prepared baking dish.

Flatten the paste evenly on the baking dish.  It should be about 1 1/2 inch thick.

This is an optional step,  but it gives a nice crunch to the bars.

Remember the 1/2 cup of granola we haven’t used.  Add that on top of the date and walnuts paste and press down gently using the palm of your hand.

Place in the fridge for at least half an hour.

When it hardens, gently lift the plastic wrap from the baking dish and place on a cutting board. Then cut the bars into 2 inch squares using a sharp knife.

Enjoy as a snack!

Store in an airtight container in the fridge for up to 2 weeks.
