Easy Chicken Bistro

easy chicken bistro This easy chicken bistro is super delicious, you would want to make it for your family over and over again. The leftovers taste even better. So go ahead, make some extra and have it for lunch the next day.I like to season the chicken with all the spices I am using first, then brown it in the skillet. The chicken will have a lot of flavor, which will melt in your mouth.

A couple of extra things I’d like to mention about the chicken. I am using boneless, skinless chicken in this recipe. But if you can use bone-in chicken, it would be better. It might take an extra 5 to 10 minutes to cook though, but it’s worth it. Also, I don’t like to use chicken with the skin on. That’s just my way on saving on fats and extra calories. However, if you like using the skin, then make sure to season the under it as well. You might need extra seasonings for that.

All right, let’s get started!

Prep time: 15 minutes

Cook time: 70 minutes

Serves: 4

Ingredients:

1 lb of skinless chicken thighs (bone-in or boneless)
Salt and pepper to taste
2 teaspoons of ground ginger
2 teaspoons of dried oregano
2 teaspoons of turmeric
2 cloves of garlic
1/2 onion chopped
2 carrots diced
2 celery sticks diced
1 bay leaf
1 chicken bouillon
1 (14.5 oz) can of diced tomatoes with juice
2 cups of button mushrooms or your favorite mushrooms
2 tablespoons of olive oil
1 cup of water
About 1 teaspoon of chopped parsley to garnish

Directions:

easy chicken bisto 1 Season a chicken on both sides with salt, pepper, ground ginger, oregano and turmeric. easy chicken bisto 2 Heat up a large heavy skillet and add 1 tablespoon of olive oil. Brown the chicken thighs on each side for 4 to 5 minutes. Remove from the skillet and keep warm. easy chicken bisto 3 Add the second tablespoon of olive oil, onion, garlic, celery, and carrots. Season with salt and pepper and saute for 5 minutes. Add the bay leaf and chicken bouillon and cook some more while steering from time to time until the bouillon is dissolved. easy chicken bisto 4 Add the water and tomatoes. Return the chicken back to the skillet with the juice that it released and top off with mushrooms. Cover the skillet and cook on low heat medium heat for 30 minutes. easy chicken bisto 5 After the 30 minutes, remove the lid and continue cooking for another 10 to 20 minutes until the sauce thickens up.
Most recipes will require you to add flour to help thicken the sauce. But you won’t need that in this recipe because we already used ground ginger, which will insanely flavor your chicken, help thicken the sauce and it’s also good for you. That’s why I love ground ginger. easy chicken bisto 6 Remove the bay leaf, and garnish the easy chicken bistro with parsley. Serve hot with steamed hot or fresh bread.
