Spiced Cranberry Sauce

  • ½ Sweet Chopped Onion
  • 1 Teaspoon of Olive Oil
  • 1 Package of Cranberries (12 ounces)
  • ½ Teaspoon of Salt
  • ¼ Teaspoon of Allspice
  • 1 Teaspoon of Ground Ginger
  • ½ Teaspoon of Cinnamon
  • ½ Teaspoon of Turmeric
  • 1½ Cups of Chicken Stock
  • ⅔ - 1 Cup of Sugar
  1. To a medium size sauce pan, add the olive oil and onions. Saute the onions for 5 minutes, then add the cranberries, salt, allspice, ground ginger, cinnamon and turmeric.
  2. Mix the spices with the cranberries and the onions and allow them to saute together for another 5 minutes. The onion will the start to caramelize and some of the cranberries will start to pop open.
  3. Add the chicken stock and simmer for another 10 minutes. This will give more time for the cranberries to cook before you add the sugar.
  4. Add the sugar ⅓ of a cup at a time and taste as you go until you reach the desired sweetness.
  5. Cook the cranberries for an extra 5-10 minutes till they thicken and caramelize.
  6. Allow the spiced cranberry sauce to cool in the fridge for at least 2 hours before serving. The sauce could be made up one week in advance. Enjoy!
