Moroccan Chicken with Carrots and Broccoli

  • 1 lb of chicken breast fillets
  • 1 tbsp of olive oil
  • 1 small onion chopped
  • 1 head of broccoli
  • 3 carrots
  • 2 cloves of minced garlic
  • ½ pickled lemon cut in 4 pieces
  • ½ tsp of ground ginger
  • ½ tsp of cumin
  • ½ tsp of turmeric
  • salt and pepper to taste
  • 1 cup of water
  1. Cut the broccoli into florets and the carrots into long thin pieces and set aside
  2. In a large skillet, heat up the olive oil and saute the onion until translucent, then add the minced garlic and saute for about 30 second, just enough time to smell the garlic aroma
  3. Lay the chicken breasts and on the onion and garlic, then season with salt, pepper, ground ginger, turmeric, and cumin. Saute for a couple of minutes
  4. Turn the chicken over, then add the pickled lemon and saute for a couple more minutes
  5. Flip the chicken over again
  6. Add the carrots, broccoli and water to the skillet
  7. Cover the skillet with a lid and cook on low medium heat for 20 minutes
  8. Enjoy hot with bread or rice!
If you want a carb-free meal, then skip the bread and rice and eat just the chicken and veggies
