Flourless peanut butter brownie cookies These flourless peanut butter brownie cookies are very simple to make, quick, delicious and chewy. And oh boy, once you make them, you won’t get enough. And the best part, they are ready in less than 30 minutes. Now, that’s what I call a quick dessert.

I am pretty bad with sweets, especially the homemade ones. That is why you don’t see too many cookie recipes on Tajoon. I could bake them, then sit down with my cup of coffee and eat half a batch. But when I make these flourless peanut butter brownie cookies, I don’t feel as guilty even I eat the whole batch. After all the only unhealthy ingredient is the brown sugar.

That’s not too bad is it? My husband Habib, who happens to be a dentist, will tell you that it is really bad. I’d say not at all, so let’s make some cookies and enjoy them 😉

Prep time: 10 minutes
Cook time: 10 minutes
Makes: 9 medium cookies or 12 small cookies

Ingredients:
2/3 cup of peanut butter
1/3 cup of unsweetened cocoa powder
1/3 cup of brown sugar
1 Egg
1 teaspoon of baking powder
1 teaspoon of vanilla extract

Directions:
Pre-heat the oven to 350°F, and line a baking sheet with parchment paper or grease it. Flourless peanut butter brownie cookies 2 In a large bowl, beat the egg, add the brown sugar, cocoa powder, baking powder, vanilla extract and peanut butter. Using a spatula mix everything together. Flourless peanut butter brownie cookies 4 Measure about 1.5 tablespoon of the batter and form little bowls using the palm of your hands, then place them in the prepared baking sheet. Using a fork or your fingers press down on the cookies slightly to flatten them. Flourless peanut butter brownie cookies 7 Bake for only 8 to 10 minutes. They will look like they’re underdone, but they will be good once cooled.
Don’t over bake them so they don’t dry out. Remember the only uncooked ingredient we have in the batter in the egg and it wouldn’t take longer than 10 minutes to cook in the oven. Flourless peanut butter brownie cookies 8 Transfer the cookies to a cooling rack and allow them to cool for at least 10 minutes before you enjoy them.
If you can’t wait for them to cool off, enjoy them hot with a scoop of vanilla ice-cream, yum…I am not big on ice-cream, so I usually wait and make coffee.
They will stay moist and fresh for up to 3 days  if kept in an airtight container. They could stay fresh longer, but then I wouldn’t know…when I make these cookies, they are usually eaten within 2 or 3 days at most. Flourless peanut butter brownie cookies 9 Enjoy with tea, coffee, or milk.
