Ghaymen is a traditional Persian meat stew, also called Khoresht in the Farsi language.  It is with no doubt, one my favorite comfort foods. I, of course cook it using my Moroccan technique.

This recipe is not one of easiest, but it is a great crowd pleaser, which makes it the perfect dish for big parties. In fact, 4 out of 5 Persian parties I have been to (and I have been to quite a few) served Ghaymen as a main dish.

Also, it freezes quite well, so you can make a big pot, freeze it and eat it once a month for the next 4 months. You can never go wrong making any kind of stew. Just mix the right ingredients and let the stove or slow cooker do the rest. So why not try making it the Persian way to give your kitchen some heat.

Prep time: 10 Minutes

Cook Time: 2.5 hrs

Ingredients:

 1 lb of cubed stew meat (Beef or Lamb)
1 Small onion diced
1 Tomato pealed and diced
1 tbsp of parsley
1 tbsp of tomato paste
3 dried lemons
1 tbsp of Olive Oil
1 tbsp of Lemon Juice
1 Cup of Yellow Split Peas
2 Potatoes cut for French fries
1/2 cup of cooking oil
Spices: [Salt, Pepper, 1 tsp of ginger,
1/4 tsp of ground saffron,
1/4 tsp of cinnamon, 1 cinnamon stick]
4 cups of water

Directions:

Soak the yellow split peas in water, set aside.

In a cooking pot, add the meat, onions, parsley, dried lemons, spices, and olive oil

Mix well and saute on low-medium heat for 10-15 minutes until the meat is browned

8 Add the diced tomato and saute for another 5-10 minutes, then add water. Cover pot and cook for 90 minutes or until meat is fork tender.

In the meantime, fry the potatoes and transfer them to a plate covered with paper towel to
remove any excess oil

Once the meat is cooked, add the tomato paste and cook for another 15 minutes.

Wash and drain the yellow chickpeas, then add them to the meat. Cook for another 20 to 30 until the chickpeas are cooked.

This is what it should look like once it is done

Add 2/3 of the French Fries to the pot and simmer again for another 10 minutes

Save the other 1/3 of French Fries to garnish as shown on the picture
Enjoy hot with pita bread or rice.

Ingredients
  • 1 lb of cubed stew meat (Beef or Lamb)

  • 1 tbsp of Olive Oil
  • 1 tbsp of Lemon Juice
  • 1 Cup of Yellow Split Peas
  • 2 Potatoes cut for French fries
  • ½ cup of cooking oil
  • Spices: [Salt, Pepper, 1 tsp of ginger,
  • ¼ tsp of ground saffron,
  • ¼ tsp of cinnamon, 1 cinnamon stick]
  • 4 cups of water
Directions
  1. Soak the yellow split peas in water, let it sit
  2. In a cooking pot, add the meat, onions, parsley, dried limes, spices, and olive oil
  3. Mix well and saute on low-medium heat for 10-15 meat
  4. Once the meat is browned and the onion is soften, add the diced tomato
  5. Cook for another 5-10 minutes
  6. Add the water (4 cups)
  7. Cover pot and let it simmer for 90 minutes or until meat is cooked
  8. In the meantime, heat up a skillet and cooking oil
  9. Fry the cut up French Fries
  10. Let the French fries sit on paper towel to drain them from any excessive oil
  11. Once the meat is cooked, add the tomato paste
  12. Simmer for 15 minutes
  13. Wash and drain the yellow chick peas, then add them to the meat
  14. Cook for 20-30 minutes
  15. Add ⅔ of the French Fries to the pot and simmer again for another 10 minutes
  16. Save the other ⅓ of French Fries to garnish
  17. Enjoy hot with pita bread or rice
