Grilled Greek Chicken

grilled greek chicken Grilled chicken is one of those easy dinners that I like to make during the week. I can marinate it in the morning or even the night before. Then when I am back at the end of the day, all I have to do is put the chicken along with some vegetables on the grill. 15 minutes later, dinner is served.

While the chicken and vegetables are cooking, I like to prep a simple salad or just heat up some leftover steamed rice. It is that simple, yet I get to serve a healthy and delicious dinner to my family.

To make it even easier on myself, I like to make extra chicken and use it to make sandwiches for lunch the next day or serve it on a salad.

Prep time: 10 minutes

Cook time: 14 minute

Inactive time: 30 minutes – 24 hours

Serves: 4

Ingredients:

1.5 lbs of boneless skinless chicken thighs
3 cloves of minced garlic
1 lemon
1/2 cup of plain yogurt
Salt and pepper to taste
1 tablespoon of ground ginger
1 tablespoon of oregano
1 teaspoon of olive oil
Some parsley leaves for garnish

Directions:

grilled greek chicken 2 In a large bowl, mix together the yogurt, garlic, lemon zest and lemon juice. grilled greek chicken 3 Pat dry the chicken, then season it on both sides with salt, pepper, ground ginger and oregano.
In addition to salt and pepper, I like to add any dry seasonings directly to the meat or chicken. I think it gives it a lot more flavor. grilled greek chicken 5 Add the seasoned chicken to the yogurt sauce and mix well until it’s coated with yogurt. Then add the olive oil and mix again. grilled greek chicken 6 Place the chicken in the fridge for up to 24 hours. If you don’t have time, let it marinate for at least 30 minutes. grilled greek chicken 7 Grill the chicken for 6 -7 minutes on each side or until it’s no longer pink. grilled greek chicken 9 To make an easy and healthy dinner, grill some vegetable as well. That will take care of your side dish.
I like to grill zucchini, yellow squash, white squash, tomatoes, pepper, asparagus and mushrooms. I usually cut them in half, drizzle a little of olive oil, them grill them along side with meat, chicken, or fish.

  6. Garnish with parsley and serve the grilled Greek chicken with grilled vegetables or/and steamed rice.
