Homemade Mashed Potatoes

homemade mashed potatoes There is nothing better than homemade mashed potatoes. They taste fresh and they don’t have all the additives you’ll find in boxed mashed potatoes.

When my mom made us mashed potatoes, she would use 2 or 3 of the laughing cow cheese wedges. I like to use a combination of cream cheese and Parmesan cheese.

I try to used as little butter as possible. 4 tablespoons are really the least I could get away with while cooking 2 pounds of potatoes. Anything less, and your mashed potatoes will turn out a bit dry and won’t really keep well in the fridge should you have any leftovers, which never happens in my house.

In fact, When I make these homemade mashed potatoes, my kids devour them. It seems like I can never make enough. They like them so much, when they are on the menu, I expect a lot of hugs, kisses and thanks after dinner. It’s amazing the little things that make kids happy. Just homemade mashed potatoes, who knew!!

Makes: 4-6 servings

Ingredients:

2 lbs of potatoes
1 cup of milk
4 table spoons of butter (1/2 stick)
2 tablespoons of cream cheese
1/2 cup of Parmesan cheese
Salt and Pepper to taste
Water for boiling the potatoes

Directions:

homemade mashed potatoes 1 Peel and cube the potatoes, put them a pot then add water just until it cover the potatoes. Add some salt and boil them until they’re fork tender.
Always cook the potatoes in cold water so they cook evenly. homemade mashed potatoes 2 Drain the potatoes, place them in a food mill. Add the Parmesan cheese and cream cheese, then mash everything together. The hot potatoes will melt the cheese and the food mill will mix everything together for you.

You can also use a potato ricer but I prefer food mill because you can mix everything together at once instead of working in batches.

The leftover mashed potatoes will keep well in an airtight container in the fridge for a day or 2.
