Honey Roasted Almonds

I got this recipe from cooks.com, but of course I changed a bit by adding cinnamon. The combination of honey and cinnamon is phenomenal. I felt like I was at the fair when I was making these almonds.
Ingredients:

2 Cups of unsalted Roasted Almonds (recipe here)
1/4 Cup of Sugar
1/2 Tsp of Salt
1/2 Tsp of Cinnamon
2 Tbsp of Honey
2 Tbsp of Water
2 Tsp of Almond or Vegetable Oil
 Directions:

 In a small bowl combine the sugar, salt and cinnamon

Combine the honey, water and oil in a medium size pan and bring to a boil

Stir in the roasted almonds and continue to cook until all the liquid has been absorbed by the nuts

Stir in the sugar and cinnamon mixture

Spread evenly on a baking sheet and allow them to cool for 1 hour

While waiting for the almonds to cool off, I thought I’d introduce 6 month old baby Arian who is waiting impatiently for me to pick him up.
I just love that smile 🙂

When almonds are cooled, you can serve or store for up to 2 weeks
