Kookoo Sabzi with Kale, Walnuts and Barberries

Kookoo Sabzi is a Persian dish usually make with different kinds of greens such as spinach, lettuce, and parsley, just to name a few.  My friend Hegi told me that she was making Kookoo Sabzi with Kale, so I decided to try it. I liked how sweet it tasted, the sauteed onions, which are not part of the traditional recipe, added extra flavor to the greens. Also, Kookoo Sabzi is usually is made in a pan, just like you would make a pancake. But I like to let my oven do the work for me. So I just bake as if you would with a quiche or a Fritata, and it tasted just a good. I have to say this is not an easy recipe, but it is worth the effort.

 Serves: 6-8
 Ingredients:
1
1 Bunch of Kale
1 Cup of Cilantro leaves
1 Cup of Parsley leaves
1/2 Onion Chopped
1/2 Cup of Barberries
1 Cup of Chopped Walnuts
5 Eggs
1 tsp of Baking Soda
1 tsp of Turmeric
2 tbsp of olive oil
Salt and Pepper to taste
Cooking Spray
Directions:

Preheat the oven to 350 Degrees F.
 Spray a 9 inch baking dish with cooking spay

 Wash the barberries at least 3 times and soak in water

 Saute the onion in 1 tbsp of olive oil for 5 minute until softened just like the picture shows and set aside

 Chop the kale, cilantro and parsley until they are fine. This process is the hardest part of the recipe; it can take up to 15 minutes. Just be patient. And No, I wouldn’t use the food processor because it will make your vegetables mushy and you don’t want that.

 In a bowl whisk the eggs vigorously

 Add chopped vegetables, sauteed onion, walnuts, barberries (after you drain them), baking soda, turmeric, salt and pepper

Mix well until all ingredients are incorporated
Add the remaining 1 tbsp of olive oil and mix again

 Place the mixture in the baking dish

 Cover with foil and bake for 25 minutes

After the 25 minutes, take off the foil and bake for another 15 minutes

 Enjoy as an appetizer or side dish. This is usually served with plain yogurt and Lavash Bread
