Moroccan Carrot Salad

This easy and delicious carrot dish can be served at room temperature as a salad or hot as a side dish. If you make it a day ahead, the carrots will have a chance to marinate and taste even better.  Which makes it the perfect dish for entertaining, pot luck parties and picnics.

If you make it the day before just take it out of the fridge an hour before serving to allow it to come to room temperature, or you can even pop it in the microwave heat it up and serve it hot or warm as a side dish.

This dish goes well with fish or chicken and beef kebabs. 

As a side note, I am using carrot chips but you can cut your carrots anyway you like they will still taste great.

Prep Time: 3-5 minutes

Cook Times: 15 minutes

Serves: 4

 

Ingredients:

1/2 lb of Sliced Carrots

3 Cloves of Garlic Minced

2 Tbsp of Olive Oil

1/2 Tsp of Cumin

1 Tbsp of Chopped Cilantro

Salt and Pepper to taste

Directions:

Bring water to a boil and add kosher salt

Add the sliced carrots and cook for 10-12 minutes or until the carrots are fork tender

Using a colander drain the carrots and set aside

Preheat a skillet on low medium heat and add olive oil and the minced garlic

saute for 1-2 minutes until you can smell the garlic aroma

make sure you don’t burn the garlic though

Add carrots, cilantro, cumin, salt and pepper

Mix everything together and saute for 5 minutes

Serve hot or at room temperature
