Moroccan chicken with potatoes and broccoli This Moroccan chicken with potatoes and broccoli is one of those easy, healthy, quick, and delicious one pot meals I like to make on busy weeknights. It can be ready in less than an hour and doesn’t take much effort.

Here is an added bonus, this dish tastes 10 times better the next day thanks to all the spices and preserved lemon we’ll be using. Which makes a really good leftover.

This recipe is very similar to this Moroccan chicken with carrots and broccoli dish.  The only difference is that I replaced the carrots with potatoes. If you’d like to eat more vegetables, which you should, you can actually make this dish with potatoes, carrots and broccoli.

Prep time: 10 minutes

Cook time: 50 minutes

Ingredients:

1 lb of chicken thighs
1 small onion chopped
2 large potatoes peeled and cut into wedges
1 head of broccoli cut into florets
1 tablespoon of olive oil
1/2 preserved lemon cut in 2 pieces
Salt and pepper to taste
1 teaspoon of ground ginger
1 teaspoon of turmeric
1/2 teaspoon of cumin
1 tablespoon of chopped cilantro
1 cup of water

Directions:

Moroccan chicken with potatoes and broccoli 1 In a large heavy skillet, saute the chopped onion in olive oil for about 5 minutes until it’s softened. Add the chicken and season with salt, pepper, ground ginger, turmeric and cumin.
Saute the chicken for about 10 minutes with the onion and spices turning it around from time to time until it’s no longer pink. Moroccan chicken with potatoes and broccoli 2 Add the 1 cup of water and preserved lemon, cover the skillet and cook for 15 minutes or until the chicken is fork tender.
I don’t usually add this much water when cooking chicken, but the potatoes we’ll be cooking in a moment need some liquid and will absorb most of it. Moroccan chicken with potatoes and broccoli 3 Once the chicken is cooked, add the wedges of potatoes, cover the skillet one more time and cook for another 10 to 15 minutes until the potatoes are fork tender, but still have a bit of resistance. Moroccan chicken with potatoes and broccoli 4 Once the potatoes are cooked, add the broccoli florets and cilantro, cover the skillet and cook for 3 to 5 minutes just enough time to steam the broccoli.
