Moroccan Chicken with Carrots and Broccoli

Here is a healthy and delicious Moroccan one pot meal you can make in under 40 minutes, which makes it the perfect weeknight dinner.

I came up with this Moroccan Chicken with Carrots and Broccoli recipe because my husband has been asking for carb-free meals. Meat and veggies are a great way to eat carb-free or gluten-free diet, but they can be boring sometimes. So I thought I’d spice it up a bit and add some Moroccan flavors. Theย preserved lemonsand cumin made the chicken and carrot-broccoli combo just perfect.

Prep Time: 5 minutes Cook Time: 30 minutes Serves: 2

Ingredients:

1 lb of chicken breast fillets
1 tbsp of olive oil
1 small onion chopped
1 head of broccoli
3 carrots
2 cloves of minced garlic
1/2 preserved lemons cut in 4 pieces
1/2 tsp of ground ginger
1/2 tsp of cumin
1/2 tsp of turmeric
Salt and pepper to taste
1 cup of water

Directions:

Cut the broccoli into florets and the carrots into long thin pieces and set aside

In a large skillet, heat up the olive oil and saute the onion until translucent, then add the minced garlic and saute for about 30 second, just enough time to smell the garlic aroma

Lay the chicken breasts and on the onion and garlic, then season with salt, pepper, ground ginger, turmeric, and cumin. Saute for a couple of minutes.

Don’t worry about seasoning the chicken on both sides. When you flip it a couple of times and later add the vegetable and water, your chicken will absorb plenty of flavor. Just follow along and I promise you a moist and delicious chicken ๐Ÿ™‚

Turn the chicken over, then add the preserved lemonsand saute for a couple more minutes

Flip the chicken over again. This is the last time you will flip, I promise ๐Ÿ˜›

Add the carrots, broccoli and water to the skillet

Cover the skillet with a lid and cook on low medium heat for 20 minutes

Et voila, delicious, spicy and lemony chicken ready in minutes

Enjoy hot with bread or rice! If you want a carb-free meal, then do what I do, skip the bread and rice and eat just the chicken and veggies.
