Moroccan Chicken with Peas and Carrots

 This is the traditional Moroccan Chicken with Carrots and Green Peas. It is supposed to have to citrus flavor from the pickled lemons. I have also made the sweet version with cinnamon, you can  view the recipe here.

Prep Time: 5 minutes

Cook Time: 50 minutes

Serves: 4

Ingredients:

1

2 lb of Chicken Thighs Bone in
1 Small Onion Chopped
3 Cups Baby Carrots
2 Cups Green Peas
1 tbsp of Chopped Parsley
1 preserved lemons Cut in Quarters
1 tbsp of Olive Oil
Spices: 1 tsp of Ground Ginger, 1/2 Cumin, 1/2 Turmeric
Salt and Pepper to taste
1/4 Cup of water

Directions:

In a pot, saute the onion in the olive oil for 5 minutes

Add chicken season with salt, pepper and all spices

Saute on each side for 5 minutes

Add carrots, green peas, preserved lemons, and parsley

Add 1/4 cup of water, cover the pot and cook for 30 minutes on low medium heat

Uncover the pot and mix the vegetables and chicken very gently

Cover the pot one more time for about 5 minutes

  3. Saute on each side for 5 minutes
  4. Add carrots, green peas, pickled lemon, and parsley
  5. Add ¼ cup of water, cover the pot and cook for 30 minutes on low medium heat
  6. Uncover the pot and mix the vegetables and chicken very gently
  7. Cover the pot one more time for about 5 minutes
  8. Enjoy with bread
