Moroccan Green Peas & Edamame Stew

Green Peas and Edamame stew is a very common dish in Morocco.  The preserved lemon adds citrus flavor to the meat and vegetables. This one pot dish is great as a family dinner.

 

Prep Time: 10 minutes

Cook Time: 1.5 – 2 Hrs

 

 

 

 

 

Ingredients

1

1 lb of Beef cubed for stew

1/2 Onion chopped

1 Tomato pealed and diced

1 tbsp of chopped parsley

2 gloves of minced garlic
2 Tsp of Olive Oil
4 cups of water

Vegetables:

1 cup green peas frozen

1 cup of Frozen Edamame

1 preserved lemon

1/4 cup of lemon juice

Seasonings:

Salt & pepper to taste

1 tsp of ground ginger

1/4 tsp saffron (you can substitute saffron with 1/2 tsp of turmeric)

Directions:

In a pot, add meat, onion, parsley, garlic, and seasonings

mix well and place on a medium heat

Saute for 10-15 minutes

or until meat is browned as shown on picture

Add the diced tomato

Saute for another 10 minutes

 Add 4 cups of water ,cover pot and cook for 1 to 1.5 hours or until meat is cooked.

If the meat is not cooked and the broth is evaporated,

then add 1 or 2 cups of water and let it simmer more until the meat is tender

When the meat is cooked it should have about 1 cup of broth left

as shown on the picture

Add vegetables including lemon juice

cook 10-15 minutes.


Don’t over cook the vegetables, especially the
Edamame.

Otherwise, you will end up with Edamame soup
