Red Quinoa Salad

red quinoa salad 3 Quinoa has a lot of great health benefits. It is a good source of protein, fiber and iron, just to name a few. This red quinoa salad is a great way to introduce and add quinoa to your diet.

I have to admit that quinoa is still a pretty new food for me. I am still experimenting with it. But because it doesn’t have much taste, I find it pretty easy to add to any meal such as soups, salads, parfaits and even cookies.

Quinoa comes in white, red and black. White quinoa cooks easily, black quinoa takes longer, while red quinoa is somewhere in between.

I like to make salads with red quinoa because it’s crunchier than the white quinoa, which tends to be fluffy. Aside from the texture, I also like the color the red quinoa adds to the my dishes. I am all about presentation.

For the recipe, I am using dried mint, which gives the salad a fresh taste and I love its combination with lemon juice. If you don’t have dried mint, then dried oregano will be a great substitute.

Prep time: 10 minutes

Serves: 2

Ingredients:

1 cup of cooked red quinoa
2 small English cucumber sliced with skin on
1 tomato diced
1 avocado diced
1/2 cup of green olives (or your favorite olives)
salt and pepper to taste
1 teaspoon of dried mint or dried oregano
A juice of 1/2 a lemon
2 tablespoons of extra virgin olive oil

Direction:
