Spiced Cranberry Sauce

spiced-cranberry-sauce This year, with a little extra time and effort make this spiced cranberry sauce for your Thanksgiving or Christmas dinner.

The caramelized onions and spices will add a twist to the traditional cranberry sauce, giving it a sweet, sour, spicy and savory flavor all at the same time.

You would hope to have leftovers for your sandwiches the next day, it’s that good.

Prep time: 15 minutes

Cook time: 30 minutes

Inactive time: 2 hours

Ingredients:

1/2 Sweet Chopped Onion
1 Teaspoon of Olive Oil
1 Package of Cranberries (12 ounces)
1/2 Teaspoon of Salt
1/4 Teaspoon of Allspice
1 Teaspoon of Ground Ginger
1/2 Teaspoon of Cinnamon
1/2 Teaspoon of Turmeric
1 1/2 Cups of Chicken Stock
2/3 – 1 Cup of Sugar

Directions: spiced-cranberry-sauce-1 To a medium size sauce pan, add the olive oil and onions. Saute the onions for 5 minutes, then add the cranberries, salt, allspice, ground ginger, cinnamon and turmeric.
Enjoy the smell of all these spice combination as you dust them over the cranberries. spiced-cranberry-sauce-2 Mix the spices with the cranberries and the onions and allow them to saute together for another 5 minutes. spiced-cranberry-sauce-3 The onion will the start to caramelize and some of the cranberries will start to pop open. spiced-cranberry-sauce-4 Add the chicken stock and simmer for another 10 minutes. This will give more time for the cranberries to cook before adding the sugar. spiced-cranberry-sauce-5 Add the sugar 1/3 of a cup at a time and taste as you go until you reach the desired sweetness.  You will notice that with the sweet onion and spices, you won’t need to add as much sugar as you would when you make traditional cranberry sauce. spiced-cranberry-sauce-6 Cook the cranberries for an extra 5-10 minutes till they thicken and caramelize. spiced-cranberry-sauce-8 Allow the spiced cranberry sauce to cool in the fridge for at least 2 hours before serving. The sauce could be made up one week in advance. Enjoy!
